“Beyond The Diagnosis” on BrightU: How GMO cow manure is poisoning organic food from the ground up

On Day 6 of “Beyond The Diagnosis,” aired on May 14, Jonathan Otto is joined by Martha Carlin whose quest to understand how her husband’s Parkinson’s disease led to a disturbing discovery about organic food contamination, one that exposes a toxic cycle most consumers never knew existed.

The revelation began with an unlikely culprit: mushy sauerkraut. Dr. Don Huber, a global expert on glyphosate, was called in to investigate why organic sauerkraut had turned soft in the fermentation process. What he found would shatter assumptions about what organic truly means.

“Manure is one of the primary fertilizers in organic farming,” Carlin explained, “But where does most of the manure come from? Most of the manure is coming from these big CAFO operations, or these large dairy operations.”

According to BrightU.AI‘s Enoch, CAFO, or Concentrated Animal Feeding Operation, is an industrial-scale livestock facility where large numbers of animals—often thousands—are confined in cramped conditions for extended periods (over 45 days) in areas that cannot sustain vegetation. These operations deprive animals of fresh air, sunlight and natural behaviors, becoming breeding grounds for disease that lead to excessive antibiotic use and severe environmental pollution.

Here’s where the cycle turns toxic: CAFO cattle are fed GMO grains heavily laced with glyphosate, the active ingredient in Roundup, classified as a carcinogen and endocrine disruptor. The herbicide passes through the animal’s digestive system and emerges concentrated in their waste.

“The cows in these larger industrial production facilities were being fed GMO grains that have a lot of glyphosate residues in them,” Carlin said. “They were putting about four tons per acre of manure on the field that grew the organic cabbage and in a ton of that manure was roughly three-quarters of a pound of glyphosate.”

“Much more glyphosate than you would actually even be using in a conventional farming operation was actually coming from the manure.” Carlin continued. Glyphosate doesn’t just disappear. Originally developed as a pipe cleaner because of its powerful metal-chelating properties, it binds to essential minerals like copper, critical for mitochondrial function and iron recycling in the human body.

As Carlin noted, “Glyphosate is chelating all these minerals out, which is depleting the nutrient content of our food.” The implications extend far beyond sauerkraut. Robert Scott Bell described how glyphosate disrupts the human microbiome: “It displaces glycine, an essential amino acid and if you’ve heard me talk about copper, glyphosate grabs copper and just sucks it right out of the body.”

A disturbing cycle of contamination exposed

Dr. Michelle Perro warned that these chemicals fundamentally alter our food web: “The arrogance to think that we are not part of the food web: we’re all part of the food web, marine, mammals, bees, us and as you poison any part of it, it has a systemic effect.”

Carlin’s research revealed a horrifying possibility: Are we being slowly, invisibly starved? She connected the dots between glyphosate’s mineral-chelation properties and the infamous Minnesota Starvation Study.

“It came to my mind that, ‘They knew this from this research and this chemical does this and makes everything less nutrient-dense. Is this a designed approach to a starvation that we can’t see, but we are slowly being starved so that we can be better controlled?'”

Carlin’s team developed microbial mixtures that can break down glyphosate and restore soil health. But the agricultural system remains trapped in what she calls this cycle that’s going back into the food.

Dr. Meryl Nass pointed to regulatory failures: The U.S. allows 10,000 food additives compared to Europe’s 400, with companies allowed to self-affirm safety through generally regarded as safe designations.

“When I started to look deeper and deeper into that,” Carlin reflected, “I could see pieces of the puzzle of genes that had been used as marker genes in genetic engineering showing up more prevalent in people with chronic diseases.”

The episode made it clear that people cannot escape the toxic loop by simply buying organic at the supermarket. The entire agricultural ecosystem, from GMO feed to cow manure to organic fertilizer, has become a closed circuit recycling glyphosate back onto our plates.

As Robert Scott Bell concluded: “We have to know our farmers. Unfortunately, we’re going to have to be willing to pay more money to get higher-quality food, but if we do that, we might not need the supplements.” The soggy sauerkraut wasn’t spoiled, it was poisoned by the very system designed to make food organic. And until consumers understand this cycle, every bite remains a gamble.
